Sausage Rice Casserole

Ingredients
- 1 lb. bulk pork sausage
- 1¼ c. coarsely chopped celery
- ½ c. finely chopped green pepper
- ⅜ c. chopped onion
- 1 (2⅛ oz.) package chicken noodle soup mix
- 2¼ c. boiling water*
- ½ c. regular rice
- ½ c. blanched slivered almonds
- ⅛ c. melted butter or margarine
Preparation
- Lightly brown sausage; pour off excess fat
- Add celery, green pepper and onion; saute until tender
- Combine soup mix and boiling water in 2-quart saucepan
- Stir in rice
- Cover and simmer 15 minutes, or until rice is tender
- Add rice mixture to sausage; stir well
- Pour into greased 13x9x2-inch baking dish
- Sprinkle with almonds; drizzle with butter
- Bake in 375° oven 20-30 minutes or until hot (the almonds should be lightly browned)*
*This is too much water but we haven't recorded the correct amount. Maybe try 1¾ to 2 cups. If too wet, the time needed to brown the almonds will increase.
