Sausage, Bean & Potato Casserole

Oven: 350°F
Cook Time: 20 minutes
Ingredients
- 6 links Italian sweet sausage
- 1 large onion sliced
- 1 large clove garlic minced
- 1 large green pepper diced
- 2 large potatoes diced
- 1 8 oz. can tomato sauce (or juice)
- 1 teaspoon basil leaves
- ½ teaspoon salt
- ¼ teaspoon pepper (optional)
- 1 large (16 oz.) can red kidney beans, drained
Preparation
- In a large skillet, brown sausage well. Push to one side.
- Sauté onion & garlic in pan drippings until tender (stirring occasionally)
- Add green pepper, sauté 2 minutes
- Drain excess fat off, stir in potatoes, tomato and seasonings
- Cut sausage into chunks and add to skillet
- Cover and simmer approximately 20 minutes until potatoes are tender
- Add kidney beans, put in oven (or leave in skillet) and heat through
