Oatmeal Cookies
Preheat Oven: 350ºF
Makes: about 4 dozen
Ingredients
- 1 cup (2 sticks) butter or margarine softened
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 3 cups oats (quick or old fashioned, uncooked)
- 1 cup raisins (I have substituted dried cranberries for raisins and that tasted good too)
Preparation
- Heat oven to 350ºF
- Beat together butter (or margarine) and sugars until creamy
- Add eggs and vanilla; beat well
- Add combined flour, baking soda, cinnamon and salt; mix well
- Stir in oats and raisins; mix well
- Drop by rounded tablespoons onto ungreased cookie sheet
- Bake 10-12 minutes* or until golden brown
- Cool 1 minute on cookie sheet; remove to wire rack
*Our feeling is that good cookies are soft cookies. That means you have to stop about a minute before
the recipe says - which is about a minute before it looks done. With the caveat that raw cookie dough,
while sometimes tasty, can give you a stomachache ... which I know from experience.
