Egg Nog
This is so much better than the store-bought egg nog, you'll be glad
you took the little bit of time it takes to prepare. It is fantastic with
or without the alcohol.
Ingredients
- 3 egg whites
- 1/2 tsp salt
- 1/4 cup sugar
- 3 egg yolks
- 1/2 cup sugar
- 4 cups milk
- dash salt
- 1/2 pint (1 cup) heavy cream - whipped
- 1 tsp vanilla
Preparation
- Separate eggs - beat whites stiff with 1/2 teaspoon salt, then 1/4 cup sugar
- Combine 1/2 cup sugar, yolks*, 4 cups milk and dash of salt
- Fold in whites
- Add vanilla, fold in whipped cream and mix well
- Season with nutmeg and add brandy (or Amaretto) if desired
*I always beat the eggs and add a little of the milk into them (1/4 cup?).
This helps the (thick) yolks quickly mix in with the larger quantity of (thin) milk.
