Nixon's Chicken
This is another family favorite. We heard of it years ago because it was made for President Nixon by his mother and was his favorite. We can see why. It is another great way to use up leftover turkey or chicken.
Serves 4+
Preheat oven to 350°
Bake 25 minutes
Ingredients:
- 2 chicken (or turkey) breasts (cooked)
- 1 package frozen broccoli (partially cooked)
- 1 can cream of chicken soup
- ¼ Cup mayonnaise
- 1 teaspoon lemon juice
- ½ teaspoon curry powder
- ½ Cup cheddar or American cheese, shredded
- ¼ Cup bread crumbs and melted butter
Preparation
- Preheat the oven to 350°
- Mix together:
- cream of chicken soup
- mayonnaise
- lemon juice
- curry powder
- Lay broccoli in casserole.
- Put chicken breast on top.
- Pour soup and sauce mixture over all.
- Top with ½ Cup cheese and then ¼ Cup breadcrumbs mixed with melted butter.
- Bake 25 minutes.
NOTE: If we don't have leftovers, we pre-cook the chicken breasts by boiling them an hour in salted water. Also, leftover roasted or fried chicken breasts may be used.
