Chicken With Hoisin Sauce
Ingredients
4 chicken-breast halves, boned, skinned, and cut into 3/4-inch cubes
1 tablespoon cornstarch
1 tablespoon dry sherry (I buy the cheapest sherry I can)
1 tablespoon soy sauce
1 green pepper, cut into 1/2-inch squares
1 tablespoon vegetable oil
1/2 pound mushrooms, cut into 1/2-inch cubes (we always slice them)
2-1/2 tablespoons hoisin sauce (or a bit more if you want, it's great stuff)
1/4 cup cashews
Preparation
- Sprinkle the cubed chicken with cornstarch, dry sherry, and soy sauce. Toss to coat well, and set aside.
- Stir-fry the green pepper in the oil for 1 minute. Push aside.
- Add mushrooms. Stir-fry for 1 to 2 minutes. Push aside.
- Stir-fry chicken 2 to 3 minutes (it takes me a bit more than that, when it starts to "sweat" you're just about done).
- Add back in the vegetables and heat up.
- Add hoisin sauce and cashews. Serve at once.
Yield: 4 servings.
