Scalloped Corn
This is a family favorite. I'm told it isn't difficult to prepare and everyone loves it.
Serves 6-8
Preheat oven to 350°
Bake 35 to 45 minutes
Ingredients:
- ½ cup of butter (1 stick)
- ¼ cup of sugar
- 1 Tbsp of flour
- ½ cup of evaporated milk (5 fluid oz. can)
- 2 eggs, well beaten
- 2 packages 10 oz. frozen corn, thawed
- 1½ tsp baking powder
Preparation
- Preheat the oven to 350°
- Melt butter in medium sauce pan.
- Stir in sugar and flour until well blended. Remove from heat.
- Gradually stir in milk. Add eggs and baking powder. Mix well.
- Fold in corn. Turn into a buttered 2 quart casserole dish (the one we use is about 8" x 8" x 2" deep - you don't want it to be any narrower or the center will not cook).
- Bake 35 to 45 minutes (it usually takes 45 minutes for us).
