Cinnamon Bread
Put in a mixing bowl
- 1 cup lukewarm milk
- 1 package yeast
Let stand 5 minutes. Stir. Add

- 1 tsp salt
- 1/4 cup soft butter
- 2 eggs
Beat thoroughly with a heavy egg beater or electric mixer. Beat in
Remove the beater. Let the dough rise* about 40 minutes.
Punch down and knead. Roll into rectangle 1/2 inch thick
(the width is the same as the loaf pan).
Spread with softened butter, sprinkle with 1/4 cup sugar
mixed with 1½ teaspoon cinnamon. Roll like a jelly roll.
Place in a buttered loaf pan, brush with melted butter,
cover with a clean cloth, and let rise*. Bake 30 minutes at 400ºF.
*I recall it being said that 80ºF is ideal for raising dough.
Since I don't have that temperature in my home, I heat the oven
to that temperature and place the dough there. However, you cannot
just turn on the oven, heat it up to 80º - 100º and then turn the
oven off. I found the heating element (even gas) still gives off heat
so the bottom of the dough gets a lot of bubbles in it. I'd still
use the oven, but with caution. Also, I always cover the dough with
a clean dishcloth when letting it rise.
