Chocolate Cheese Pie

Ingredients
For the filling:
- 1 (6 oz.) package semisweet chocolate pieces
- 1 (8 oz.) package cream cheese, softened
- ½ cup packed light-brown sugar
- 1/8 tsp. salt
- 1 tsp vanilla extract
- 2 eggs separated
- ¼ cup packed light brown sugar
- 1 cup heavy cream, whipped
Preparation
- Prepare graham crust, chocolate (optional) or regular graham crust.
- Melt chocolate over hot (not boiling) water; cool about 10 minutes. (We usually just melt the chocolate in a heavy pan over direct low heat, constantly stirring. Works but you have to be dilligent.)
- Blend cream cheese, 1/2 cup brown sugar, salt and vanilla in bowl. Beat in egg yolks, one at a time. Beat in cooled chocolate; blend well.
- Beat egg whites in bowl until stiff but not dry. Gradually beat in 1/4 cup brown sugar; beat until stiff and glossy. Fold chocolate mixture into beaten whites. Fold in whipped cream.
- Pour into chilled crust. Chill overnight.
Chocolate Graham Crust (Optional)
Ingredients
For the filling:
- 1½ cup graham cracker crumbs
- ¼ cup packed light brown sugar
- 1/8 tsp. ground nutmeg
- 1/3 cup melted butter or regular margarine
- 1 (1 oz.) square unsweetened chocolate, melted
Preparation
- Combine graham cracker crumgs, brown sugar and nutmeg in bowl.
- Add butter and cholate; mix thoroughly.
- Press mixture into 9-inch pie plate.
- Chill until firm.
NOTE: We found the chocolate graham crust too much chocolate and just use a regular graham crust.
