Buttermilk Biscuits
Makes: 8 biscuits
Oven: 375°F
Bake: 20-25 minutes
Ingredients
- 1 Tbsp. sugar
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1-1/2 tsp. salt
- 2 cups flour
- 6 Tbsp. butter (unsalted preferred)
- 1 egg yolk
- 2/3 cup buttermilk
Preparation
- Heat oven to 375°F
- Mix sugar, baking powder, baking soda, salt, and 2 cups flour in a mixing bowl
- Using the large holes of a box grater, grate butter into dry ingredients, tossing to coat as you go
- Mix egg yolk and buttermilk in a bowl (I always break the yolk then add a little buttermilk, stir, add more, stir, then add the rest with a final stir)
- Mix buttermilk mixture into dry ingredients with a fork, then knead gently until a shaggy dough comes together
- Place dough on lightly floured surface and pat until 1" thick
- Quarter dough and stack pieces on top of each other and press down to adhere (helps create flaky layers)
- Pat dough until 1" thick
- Cut with 2" biscuit cutter, re-forming scraps until all is used
- Place biscuits on parchment-lined (I use aluminum foil) baking sheet
- Bake until golden brown on the tops and bottoms, about 20-25 minutes
I tried this recipe and loved the results. Great way to use up buttermilk, but also these are good enough to warrant buying the buttermilk. If you don't have buttermilk on hand, then "make" some by adding 2 teaspoons of lemon juice or vinegar to the 2/3 cup of milk. A book says to let it stand for 5 minutes and it's done. I let it stand 20 minutes. I can't say whether these are as good with homemade buttermilk but I'd be willing to try, they were great!
